PICKLING AS POLITICS. This semester, the BiCo Pickling Club will present its first annual pickling discussion and practice group. This semester's focus is on pickling as politics. We want to create a space for students to explore the potential pickling has to function as a revolutionary, discursive, and subversive act. Students will learn the art of pickling while grappling with broader inquiries into topics such as the circular economy (where waste=food, Mitchell et. all), the politics of urban food distribution, and preservation as a metaphor for practices of care for ourselves and our planet in the face of impending and total ecological collapse. Students will work together to explore both ancestral and unprecedented methods of pickling while learning about the political, scientific, and culinary aspects of fermentation.
